Step 1
Cut each chicken breast through in half, then cover them with plastic, and pound them with a meat tenderizer to flatten them. Place a skillet on a stove over medium heat, then heat it before adding the butter and olive oil, and then let it heat until the butter has melted. Season the chicken with salt and pepper, then dredge in flour if desired, and add them to the hot skillet.
Step 2
Cook them for about 4 to 5 minutes on each side or until golden brown and the internal temperature reaches 150 degrees, then transfer them to a plate lined with a paper towel to drain off the excess oil, and set them aside. Add the remaining tablespoon of butter and let it melt, then add the sliced mushrooms spreading them in a single layer, and cook them until both sides are nice and brown.
Step 3
Add the garlic, then give them a good stir, and cook for another minute until fragrant. Pour in the chicken broth, lemon juice, and cream of mushroom soup, then add the onion powder, Italian seasoning, and heavy cream, and stir everything until well-mixed and bubbly. Taste and adjust the flavor if needed, then put the cooked chicken breasts back into the pan, and let them continue to cook over low heat for a final 3 to 5 minutes. Serve immediately and enjoy!
