Skillet cookies, which are also known as pizookies, are simple cookies that are baked in a skillet. The use of cast iron skillet makes it even easier to whip up a batch of cookies with the same flavor and texture as a regular cookie. This is demonstrated through a straight-forward tutorial by Preppy Kitchen on Youtube. The good thing about the skillet cookie is that you don’t have to chill the dough or roll out the cookie into dough balls before baking.
Ingredients:
Directions:
Use flour and baking spray to coat a 10-inch cast-iron pan or skillet.
Whisk together the flour, baking soda, and salt in a medium-sized basin until they’re well-combined.
Add the butter and sugars to the bowl of a stand mixer fitted with the paddle attachment. Beat at medium-high speed for 3 to 4 minutes, scraping down the sides as necessary, until light and fluffy. Add the egg and vanilla extract to the mixer while it’s on low speed. Scrape down the bowl as necessary as you increase the speed to medium. Add the flour mixture in a slow, steady stream while mixing on low speed until fully combined. Add 3/4 cup of chocolate chips to the mixture.
Pour the batter into the cast-iron skillet and spread it out evenly.
Pour the remaining 2 tablespoons of chocolate chips over the top of the dough and bake for another 22-25 minutes at 350 degrees Fahrenheit.
The cookie is done when a toothpick put into the center comes out clean, about 10 minutes after the edges have started to brown. Before serving, season with a little flaked sea salt.
To serve, you can take out a tub of ice cream and top the cookie with 3 scoops. This cookie is really extra delicious with any flavor of ice cream. Don’t forget to enjoy every bite!
