Chicken and broccoli

  • 1 pound chicken breast, boneless and skinless
  • 2 tbsp cooking oil, divided
  • 1 pound or about 5 cups broccoli, cut into florets
  • 1 small yellow onion, sliced
  • ½ pound white button mushrooms, thickly sliced

Stir-fry sauce

  • 2/3 cup low sodium chicken broth
  • 3 tbsp low sodium soy sauce or more to taste
  • 2 tbsp light brown sugar
  • 1 tbsp corn starch
  • 1 tbsp sesame oil
  • 1 tsp fresh ginger, peeled and grated
  • 1 tsp garlic, grated
  • ¼ tsp black pepper, plus more to season the chicken


Step 1

In a small mixing bowl, combine the low sodium chicken broth, low sodium soy sauce, light brown sugar, cornstarch, sesame oil, grated ginger, and black pepper, give them a good whisk until dissolved and well combined. Set the sauce mixture aside. Cut the chicken into small bite-sized pieces or not more than ¾-inch thick, then season it with pepper. Place a large skillet pan on a stove over medium-high heat, drizzle about a tablespoon of oil, then add the chicken pieces in a single layer, and let it sit for about a minute to get a good sear. Then, stir and fry it for about 5 minutes or until golden brown. Remove and transfer to a bowl and loosely cover to keep warm.

Step 2

Using the same skillet pan, add another tablespoon of oil followed by broccoli florets, sliced onion, and sliced mushrooms. Saute them for about 3 minutes or until the mushrooms are softened and the broccoli florets are crisp-tender. Reduce the heat to about medium or low setting. Stir the sauce mixture once more before pouring it all over the veggies. Bring it to a simmer for about 3 to 4 minutes or until the sauce has thickened. Then, put the cooked chicken pieces back into the pan, and stir them for another 30 seconds or until heated through. Add more soy sauce to taste if needed, then serve over hot rice.
