Ingredients:

  • 10 ounces bacon, cut into strips
  • 2 tbsp butter
  • 2 pounds Brussels sprouts, washed, bottoms trimmed, and cut in half
  • Salt and pepper, to taste
  • 5 cloves garlic, finely chopped
  • 1½ cups light or heavy cream
  • 1½ tsp cornstarch + 1 tbsp water (slurry), optional
  • 1/3 cup freshly shredded or grated mozzarella
  • ¼ cup freshly shredded or grated parmesan cheese

Directions:

Step 1

Preheat your oven to 190°C or 375°F, then place a large oven-safe skillet pan on a stove over medium heat, and add the bacon letting it cook until nice and crispy. Once done cooking, remove the bacon and transfer it to a plate lined with a paper towel to drain off all the excess grease, then set it aside. Remove the rendered bacon grease leaving only about 1 to 2 tablespoons, then add the butter, and let it melt before adding the Brussels sprouts. Give them a good toss, then season them with salt and pepper making sure to scrape the burned bits at the bottom well, and let them cook for about 6 minutes.

Step 2

Next, add the garlic, then stir them together for about a minute until incorporated and fragrant. Add the cream, then turn your heat setting to low, and bring it to a simmer for 3 to 4 minutes more. Stir in the cornstarch slurry until combined to thicken the cream, then add the bacon, and mix them together until well combined. Sprinkle the mozzarella and parmesan cheese all over the top, then put it inside the preheated oven, and let it bake for about 15 minutes or until nice and bubbly. Sprinkle more pepper or garnish with chopped parsley, thyme, or rosemary, then serve, and enjoy!
