Personally, one of my favorite go-to breakfasts is a nice and delicious pancake, but out of all the pancake recipes out there, this one by How Tasty on YouTube is one of my favorites because it’s so good and flavorful that one bite just isn’t enough. Also, unlike other pancakes, this one seems to be a bit more custardy and creamy which is what I love about it the most, and it also has lots of fresh fruits that are super fun to bite and chew on.

Ingredients:

  • 3 medium eggs, at room temperature
  • 1 tbsp of sugar
  • 1 tsp of vanilla paste or extract
  • ¾ cup + 1 tbsp of milk, at room temperature
  • 2/3 cup of all-purpose flour
  • 3 tbsp of unsalted butter
  • 1 cup of blueberries, fresh or frozen, or any fruit you want

Directions:

Step 1

Place a cast iron skillet pan on a stove over low heat, then allow it to heat up for a few minutes, and while waiting, prepare the batter. In a blender or food processor, add the eggs, sugar, vanilla, milk, and all-purpose flour, then process or blend them all together until smooth and runny, and keep on mixing for a few more minutes just to incorporate some air bubbles.

Step 2

Next, add the butter to your preheated pan, then allow it to melt, and slowly pour the batter into the center of the pan. Place some blueberries all over the top, then turn off the heat, and transfer the pan to a preheated oven at 220°C or 425°F. Allow it to bake for about 15 minutes or until puff and golden brown, then remove it from the oven, and dust it with powdered sugar, you can also add more blueberries on top if desired. Serve hot or warm and enjoy!
