Ingredients:

  • 2 tbsp Olive oil
  • 1 tbsp Butter, unsalted
  • 1 Onion, peeled and finely sliced
  • 7 ounces (200g) Baby chestnut mushrooms, thickly sliced
  • 14 ounces (400g) Fillet or ribeye steak, sliced into strips around 1cm thick
  • ¼ tsp Salt
  • ¼ tsp Black pepper
  • 2 tbsp Brandy (optional)
  • 1 cup (240ml) Heavy cream
  • 2/3 cup (160ml) Sour cream
  • ¼ tsp Paprika

Directions:

Step 1

Place a large skillet or frying pan over medium-high heat, then add in 1 tablespoon of oil and butter, heat them until the butter starts to foam. Add the onion and let it cook for about 5 minutes, stirring occasionally until the onion starts to soften. Put the mushrooms and cook for an additional 3 to 4 minutes, stirring often, until lightly browned. Transfer them onto a bowl, then place the pan back to the stove and turn the heat up to high.

Step 2

Drizzle the strips of steak with 1 tablespoon of oil and sprinkle with salt and pepper. Lightly toss them then place a single layer of steak onto the pan, cook them for about a minute then flip each steak strips over and cook the other side for an additional 30 seconds. Add the mushroom and onion mixture back into the pan, then lower the heat to medium. Pour in the heavy cream and sour cream, stir slowly until it starts to slightly bubble, but is not boiled. Turn off the heat, spoon the stroganoff then serve over cooked rice or pasta and sprinkled with paprika.
