Step 1
Place a stock pot on a stove, then add the chicken, and fill it with water until the chicken is covered. Add the onion, salt, and garlic cloves, then bring it to a boil over medium to medium-high heat. Once boiling, lower the heat setting to low and let it simmer for about 2 hours, then once cool, debone the chicken keeping only the broth and meat, and set them aside. Place a Dutch oven or heavy pot on a stove over medium-low heat, then add the oil before adding the flour gradually, and stir them together continuously until thickened and darkened in color.

Step 2
Next, add all of the seasonings, then in a separate pan, saute the sausages, chicken, okra, and dried shrimp, and add them to the pot as well except for the shrimp. Stir them all together until well combined, then once the pot has come to a slow rumble, cover it with the lid, and let cook for about 30 minutes. After half an hour, add the shrimp, then add the gumbo filet, and let it simmer over low heat for at least 1 more hour.
