Step 1
Place a pan over medium-high heat, then heat the olive oil, and add the chopped chicken. Cook them for about 1 to 2 minutes or until lightly browned, then set them aside, and in the same pan, add the onions, garlic, and bell pepper.

Season them with salt and pepper, then stir everything together, and saute them for about 3 minutes. Put the chicken back into the pan, then add in the diced tomatoes, rice, and paprika, and give them a good stir until well combined.

Step 3
Pour in the chicken stock followed by the saffron, then bring them to a simmer, and leave to a simmer for about 20 minutes or until the rice has absorbed the liquid. Add more stock as needed until the rice is fully cooked.
Step 4
Place all the shrimp around the sides, and sprinkle the peas all over. Cover the pan, then continue to simmer over low heat for about 10 minutes, then garnish with lemon or parsley, and serve warm. Enjoy!
