Cut the chicken things into 1″ size pieces. Put them in a bowl, then add 1 tsp of grated garlic, 1 & 1/2 tsp of soy sauce, 1/2 tsp of salt, black pepper to taste, 3/8 tsp of baking soda, 1 egg white, and 1/2 tsp of cornstarch. Mix until everything are well combined, then cover and let it sit for 40 minutes. Next, add 1 cup of potato starch to another bowl, spray some water on it and whisk. Do this step 3x, the little clumps that form will give the chicken some extra crunch. Get a bigger bowl with a lid and dump half of the starch in there, spread it out, then add the marinated chicken. After placing all the chicken, cover them with half of the starch. Put on the lid and shake a few times. Make sure that all the chicken is coated with starch evenly before transferring them to another bowl.

Next, heat up 2 cups of oil in a pan, then add the chicken piece by piece so they don’t stick together. Fry the chicken just until the outside becomes quite crispy. Once you’re done, let all the chicken rest for 15 minutes, then double fry them until they reach golden color. Set them aside. Next, for the sauce, in a bowl, combine 3 tbsp brown sugar, 2 tbsp liquid honey, 2 & 1/2 tbsp soy sauce, 2 & 1/2 tbsp ketchup, 3 tbsp of water, and 1 tbsp white vinegar. Mix them until well combined. After this, heat up another pan and pour all the sauce in. Keep stirring the sauce on medium heat, bring it to a boil, then pour some starch water to thicken the sauce. After this, add the chicken back into the pan along with 1 tsp sesame oil and 1/2 tbsp of toasted sesame seeds. Toss everything until the chicken is coated nicely, take them out, and sprinkle some diced scallions on top.
