It’s simple and easy to make; but flavorful enough to pair with cookout dishes. You can also switch the veggies and seafood depending on what’s available or to your liking. Ingredients:

  • 1/2 lb medium shrimp
  • 1/2 lb bay scallops (or lobster)
  • 1 lb crab meat (lump/claw/or combo)
  • 1 – 2 stalks of diced celery
  • 1/2 diced yellow onion
  • 1 diced red bell pepper
  • 1 lemon (juice and zest)
  • 1 tbsp butter
  • 1/2 lb elbow macaroni
  • 1/2 cup mayo
  • 1/4 cup sweet relish
  • 2 pinches of sugar (to taste)
  • old bay
  • salt/pepper/garlic/onion powder
  • 2 – 3 dashes of hot sauce
  • 2 – 3 dashes of Worcestershire sauce
  • green onion (diced for garnish)

Directions:

Step 1

To start, cook the elbow macaroni in a pot of boiling water with salt. Once it’s done cooking, strain the pasta and place it in the refrigerator to chill. Next, prep the veggies. Diced the red bell pepper, celery, and yellow onion. In a skillet over medium heat, melt 1 tbsp of butter, then add the base scallops and the shrimp. Season them with all-purpose seasoning (which is composed of salt, pepper, garlic, and onion powder) and old bay. Squeezed some fresh lemon juice. Cook it for about four to five minutes. Once the seafood is cooked, transfer them to a bowl and place it in the refrigerator to cool.

Step 2

In a bowl, add 1/2 cup of mayo, 1/4 cup sweet relish, some fresh lemon zest, some freshly squeezed lemon juice, 2 – 3 dashes of hot sauce, 2 – 3 dashes of Worcestershire sauce, 2 pinches of sugar, and a little more bit of old bay. Whisk them well to combine. Taste it as you go and season it to your preference. Once the flavor all comes together, add 1 lb crab meat and mix them. Next, add the chilled elbow macaroni followed by the diced bell pepper, celery, and onion, then mix well. Lastly, add the shrimp and scallops and give it a good mix. Garnish with some chopped green onion to pop some color and your seafood salad is ready to serve.
