Step 1

Place a large skillet on a stove over medium-high heat, then add the diced bacon, and cook them until crispy draining off all the excess grease using paper towels. In a large bowl, add the cooked bacon, flour, cheese, parsley, baking powder, black pepper, salt, baking soda, and garlic powder, and grate over the butter.

Step 2

Stir everything together until soft dough forms, then transfer it to a well-floured surface, and knead it quickly. Roll the dough until ¼ inch thick, then cut them into rounds with a biscuit cutter, and place them on a baking sheet lined with parchment paper or Silpat.

Step 3

Place them in the freezer for about 15 minutes, then let them bake at 450°F for about 14 to 17 minutes or until nice and golden brown. While waiting for the biscuits to bake, prepare the gravy sausage gravy, place a pan on a stove over medium heat, then add the ground sausage, and break them apart.

Step 4

Let the meat saute until brown and cooked through, then add the flour, stir, and continue to cook for about 1 to 2 minutes. Season them with salt, pepper, and thyme, then give them a good stir to combine, and slowly pour in the milk while mixing continuously. Let it simmer for about 3 to 4 minutes until thickened, then scoop it over warm biscuits, and serve. Enjoy!
