Packed with potatoes, sausages, and tomatoes – this recipe is a simple comfort dish that will be a staple in your house at no time. Ingredients:

  • 3 medium potatoes (500g) peeled and diced
  • 1 tbsp olive oil
  • 8 pcs. classic pork sausages
  • 1 brown onion (coarsely chopped)
  • 1 long red chili (seeded, finely chopped) optional
  • 1 can (400g) diced tomatoes
  • 1 cup (120g) frozen peas

Directions:

Step 1

Boil the potatoes for 10 minutes or until fork tender. Next, in a pan over medium heat, add 2 tsp olive oil, then add the sausages. Cook them, turning frequently for about 4 to 5 minutes until they are browned. After cooking, slice the sausages into 3cm pieces. Next, add another tablespoon of oil to the same pan, then add the chopped onion. Saute it until soft, then add chopped 1 long red chili. Saute for a minute, then add 1 can of diced tomatoes followed by the potatoes and sausages.

Step 2

Fill the empty can of tomatoes with water and add it to the mixture. Stir all together well to combine, then simmer for 6 to 8 minutes. After 8 minutes, add the frozen peas and cook for another minute. Serve with some garlic bread and enjoy.
