This soup is loaded with sausage, beans, and lots of veggies, very healthy and hearty, and the perfect soup to share with your family or guests. You can make this easily in your crockpot and wait for it to finish cooking while preparing other dishes that you will serve for the day.
Step 1
In a 6-quart or larger slow cooker, add the sausage sliced, cannellini beans, potatoes, carrots, celery, red onion, minced garlic, salt, black pepper, oregano, and vegetable broth.

Step 2
Mix everything until evenly combined, then place the lid of the crockpot, and cook the soup on a high setting for about 3 to 4 hours or a low setting for about 7 hours or until the vegetables are cooked through.
Step 3
Put the kale into the soup, then place the lid back onto the crockpot, and continue to cook on a high setting for an additional 10 minutes or until the kale is hot but bright green. Serve and enjoy!
