Ingredients:

  • 2/3 cup unsalted pumpkin seeds
  • 2/3 cup pumpkin puree
  • 1¼ cups heavy cream
  • 2 cups white sugar
  • 1/3 cup maple syrup
  • ¼ cup light corn syrup
  • ¼ cup water
  • 3 tbsp cold unsalted butter, cut into slices
  • ¼ tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 1/8 tsp ground nutmeg
  • 1/8 tsp salt
  • ¾ tsp white vinegar or lemon juice
  • ¼ tsp flaky sea salt, such as fleur de sel

Directions:

Step 1

Add the pumpkin seeds to a pan over medium heat, then toss them, occasionally, and let them toast for about 3 minutes or until they turn very light golden brown. Remove them from the heat, then transfer them to a bowl, and allow them to cool down. Grease an 8×8-inch baking dish with butter, then line it with parchment paper making sure both sides are covered, and pour in the cooled pumpkin seeds. Add the sugar, maple syrup, corn syrup, and water to a large saucepan, then whisk them together until combined, and set them aside.

Step 2

In a separate small saucepan, add the pumpkin puree and heavy cream, then place them over low heat, and stir together to combine. Place the saucepan with the sugar mixture on the stove over medium-high heat, then bring it to a boil while whisking occasionally, and turn the heat down to medium. Allow it to cook until the temperature has reached 245°F, then slowly pour in the warm cream and pumpkin mixture while whisking constantly, and continue to cook them over medium heat until the temperature has reached 240-245°F.

Step 3

Turn off the heat then add the butter, ground cinnamon, ground cloves, ground nutmeg, salt, and vinegar, and stir them thoroughly until incorporated. Carefully pour the mixture into the baking dish, then let it cool for around 10 minutes, and sprinkle the flaky sea salt crystals all over the top. Let it cool down to room temperature, then wrap it with plastic, and place it in the refrigerator to chill for about 30 minutes. Cut it into small pieces, then serve, and enjoy!
