Ingredients:

For the patty:

  • 10-12 oz of salmon fillet meat
  • 1 to 2 shallots
  • 1 spoonful of mustard
  • lemon juice
  • fresh dill
  • honey
  • 1/4 cup of breadcrumbs
  • salt
  • pepper
  • butter
  • burger buns

For the slaw:

  • bagged pre-cut slaw
  • mayonnaise
  • vinegar
  • sugar
  • salt
  • celery seeds (optional)

Instructions:

Step 1:

Make the coleslaw. Mix the vegetables, a big glug of vinegar, and mayo (enough to hold it together) in a bowl. Add in a big pinch of sugar, a little pinch of salt, and celery seed (optional). Stir then taste. This should taste strong to compliment the salmon burgers. Let it sit in the fridge for a few hours or overnight before suing.

Step 2:

Chop the shallots and dill finely. Put in a mixing bowl then add 1 spoonful of mustard, a bit of lemon juice (teaspoon, max), a small amount of honey, and freshly ground pepper.

Step 3:

Remove the salmon skin using a knife and slice it into 1/2 inch cubes. Place 2/3 of the fish into the same mixing bowl. Finely chop the remaining salmon, and grind into the cutting board using the side of your knife to make a fine paste. Once done, add to the bowl.

Step 4:

Add a quarter cup of breadcrumbs into the bowl and mix everything well. This will make it moldable. Shape into two patties that match the size of your burger buns. They will not shrink much during cooking. Sprinkle some salt on the outside of the patties before cooking.

Step 5:

Place a non-stick pan over medium-low heat and add some butter. Let it melt and become brown. Once browned, lay the patties. Cook until it becomes brown for about 3 minutes. Flip then cook the other side for another 3 minutes. If the inside is firm when you push on the surface, it means your burger is done.

Step 6:

Assemble the burger. Cut the bun in half, place the patty, and top with the slaw. Enjoy!
