As I was searching for an easy side dish to prep for a busy weekday, I found this rosemary roasted carrots from Simple Delicious Nutritious on Youtube. Intrigued, I immediately tried it, and it truly didn’t disappoint. It’s flavorful, savory, and so easy to prepare. This is an easy side dish you can do not only for weekdays but also for any gatherings.

Ingredients:

  • 1 lb carrots
  • 1 tbsp fresh rosemary
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • salt and pepper, to taste

Directions:

Step 1

Preheat the oven to 425 degrees F. Chop the carrots and put them in a bowl. Chop 1 tsp fresh rosemary and add to the bowl. Now, add 1 tbsp olive oil, 1 tbsp garlic powder, and salt and pepper to taste. Toss to combine ingredients.

Step 2

Prep baking sheet with aluminum foil. Dump the carrots on the lined baking sheet, distributing them evenly. Put it in the preheated oven at 425 degrees F and roast for 20 minutes or until tender. Serve hot.
