The best side dishes are often the simple ones and those that don’t require that many ingredients, just like this version by Food Wishes on YouTube. What I love about this is that it uses olive oil which makes it healthier than other versions, and you only need salt, pepper, and cayenne pepper to season them which we all usually have available in our kitchen. This makes this dish convenient and perfect for last-minute preparations, and the cooking process keeps them warm for long.
Step 1
Preheat your oven to 200°C or 400°F, then pour the olive oil all over the bottom of a heavy baking dish or cast-iron dish, and place the potatoes cut into pieces. Toss them nicely until the potatoes are well coated with the oil, then sprinkle the chopped bell pepper all over them along with the thyme sprigs, and then season them with kosher salt, black pepper, and cayenne pepper to taste.

Step 2
Place it in the preheated oven, then allow them to roast for about 30 minutes, and toss the vegetable to turn them over, but make sure not to turn those that are stuck to the dish. Put them back in the oven, then continue to roast them for about 20 more minutes, and then toss the vegetables again so that the unbrowned sides come into contact with the bottom of the dish.
Step 3
Put them in the oven again, then continue to roast them for about 15 more minutes or until browned and tender, and then turn the oven off. Leave them in the oven for 15 minutes, then toss them one more time, and season them with some more salt, black pepper, and cayenne pepper to taste. Transfer them to a serving bowl, then serve, and enjoy!
