Cookies are a wonderful treat and it becomes extra special when you stuff it with cheesecake filling just like this recipe by Bailey’s Bakes on YouTube. This yummy treat is every dessert lover’s dream and I bet that even those who don’t like cookies will change their mind once they’ve tried this.

Step 1
In a mixing bowl, add the cream cheese, powdered sugar, and 1 teaspoon of vanilla essence, then beat them until smooth and combined, and dollop a tablespoon of each of the fillings onto a greased baking sheet lined with parchment paper. Place them in the freezer, then let them sit for a couple of minutes until hardened, and while waiting, prepare the cookie dough.
Step 2
In another large bowl, add the cold butter and both sugars, then beat them until fluffy, add the egg, vanilla essence, and red food coloring, and continue to beat until fully combined. Scrape the bowl to make sure everything is incorporated and give it a final mix, then in a separate bowl, whisk together the flour, cocoa powder, cornstarch, baking soda, and salt until uniform, and add it to the wet mixture.
Step 3
Fold them until thoroughly combined, then add the chocolate chips, and mix well until evenly distributed. Divide the cookies evenly, then shape each portion into a ball, and make a well at the center. Place a frozen filling at the center, then bring the edges over to the center until nicely covered, and reshape into a ball.
Step 4
Grease a baking sheet, then line it with parchment paper, and place the cookie dough balls spacing them evenly. Press down more chocolate chips, then bake them in an oven preheated at 160°C or 320°F for about 40 minutes, and garnish them with some flaked sea salt. Serve and enjoy!
