Ingredients:

Cookie Batter:

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 2 tsp ground ginger
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1 can of pumpkin puree (15 oz can)
  • 2 cups packed light brown sugar
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 1 tbsp vanilla extract

Filling:

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, room temp
  • 1/2 tsp vanilla extract
  • 3 cups confectioner’s sugar

Directions:

Step 1

Preheat the oven to 350 degrees F and line two baking sheets with baking or parchment paper. Set it aside. Next, add 3 cups of all-purpose flour to a large mixing bowl followed by 1 tsp baking soda, 1 tsp baking powder, 1 tsp kosher salt, 2 tsp ground ginger, 1 1/2 tsp ground cinnamon, and 1/4 tsp ground cloves. Mix well and set aside. To another bowl, add 2 cups packed light brown sugar, 1 can of pumpkin puree, 2 large eggs, 2/3 cup vegetable oil, and 1 tbsp vanilla extract. Whisk everything well together. Once done, combine the wet and dry mixture and stir them together gently.

Step 2

Next, grab a small ice cream scooper and scoop about 2 tbsp batter onto the prepared baking sheet. Once you’re done, bake them in the preheated oven for 12 to 15 minutes. In the meantime, make the filling. To the bowl of your stand mixer, add 1/2 cup unsalted butter at room temperature, 4 oz softened cream cheese, and 1/2 tsp vanilla extract. Mix until smooth, scrape the bowl down, then add 3 cups of confectioner’s sugar. Continue mixing until light and fluffy.

Step 3

Once done, transfer the filling to a piping bag. After the cookies are done baking, remove them from the pan and let them cool for a bit. After this, pipe the filling on one cookie, then add another cookie on top, making the whoopie pie. Repeat these steps to make more whoopie pies. Serve and enjoy!
