Step 1

In the bowl of a stand mixer, add the softened cream cheese, then beat it until fluffy, add the brown sugar, and keep mixing until smooth and combined. Add the pumpkin puree, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt, then mix them until thoroughly combined, and set the mixture aside.

Step 2

In a separate bowl, beat the whipping cream until soft peaks form, then gradually add in the powdered sugar while beating continuously, and keep mixing until stiff peaks form. Next, transfer the cookies to a Ziploc bag, then crush them until crumbs, and scoop some of them onto the bottom of a trifle bowl spreading it evenly.

Step 3

Top the cookie layer with half of the pumpkin cream cheese mixture and spread it evenly, then top it with half of the whipped cream, and repeat the layers with the remaining ingredients. Sprinkle the toffee bits on top, then cover the bowl, and place it in the refrigerator to chill for at least 4 hours or up to overnight. Serve and enjoy!
