These bars have buttery graham crust, creamy cheesecake filling then topped with a delicious pumpkin spice cheesecake. What more can you ask for in this homemade dessert? Put the crushed graham crackers in a large bowl then add 6 tablespoons of melted butter. Mix them using a fork until it becomes crumbly.
Coat the baking dish with cooking spray. Place the crumbs into the bottom of a baking dish and press to form the crust. Place in the oven and bake at 325 degrees F for 10 minutes. Once done, place in a wire rack to cool completely.
Place the cream cheese in a bowl then beat on low speed using a hand mixer. While continuously mixing, add 1 and 1/2 cups of sugar gradually. Next, add the egg one at a time and beat until blended. Lastly, add 1 teaspoon of vanilla and beat until it becomes smooth.
Spread half of the cheesecake mixture onto the cooled crust and spread evenly. Chill in the fridge.
Add the pumpkin puree and pumpkin pie spice to the remaining cheesecake mixture. Mix until combined and smooth. Pour the pumpkin mixture over the cheesecake and spread evenly. Place in the oven and bake at 325 degrees F until the edges are set but the center is still slightly jiggly for about 40 to 50 minutes.
Once done baking, place the dish on a wire rack and let it cool completely for about 2 to 3 hours. Cover it with aluminum foil and place it in the refrigerator for at least 3 hours or overnight. Cut it into bars. Add whipped cream and pumpkin spice on top then serve.
