Ingredients for Pumpkin Cream Cheese Muffins:
Cream Cheese Filling
- 1 (8 oz) block of cream cheese
- ½ cup of powdered sugar
- ½ tsp of vanilla extract
Flour Mixture
- 2 cups of all-purpose flour
- 1 tsp of baking soda
- ½ tsp of baking powder
- ½ tsp of salt
- 2 tsp of pumpkin spice
- 1 tsp of cinnamon
Wet Mixture
- 2 large eggs
- ¾ cup of brown sugar
- ¾ cup of white sugar
- 120ml or ½ cup of oil
- 1½ cup of pumpkin puree
- 60ml or ¼ cup of milk
- 2 tsp of vanilla extract
- Pumpkin seeds, for topping
How to Make Pumpkin Cream Cheese Muffins:
Step 1
Preheat your oven to 350°F, then line your muffin tray with muffin liners alternately, and set it aside. In a small mixing bowl, add the cream cheese, powdered sugar, and vanilla extract, then mix them until well combined, and set the filling aside. In another bowl, sift together the flour, baking soda, baking powder, salt, pumpkin spice, and cinnamon, then set the mixture aside for later.
Step 2
In a separate bowl, add the eggs, white sugar, brown sugar, and oil, then beat them until light and fluffy, and then add the pumpkin puree, milk, and vanilla. Keep mixing until incorporated, then add in the flour mixture, and continue to mix just until combined, divide the batter in the prepared muffin liners in the muffin tray evenly, each liner should be almost full.
Step 3
Transfer the cream cheese filling into a piping bag, then pipe it in the middle of the batter, and top them with pumpkin seeds. Place the muffin tray in the preheated oven, then let them bake for about 20 minutes or until a toothpick inserted at the center comes out clean, and serve. Enjoy!
