While casually browsing the internet for a good recipe that I could try with leftover ingredients, I stumbled upon this video tutorial by Melissa’s Southern Style Kitchen on YouTube, and I immediately ran to the kitchen to check if I had most of the ingredients I would need. I gave it a try and was really satisfied with the result because it turned out really delicious and addicting. This dessert recipe is definitely a winner and I am planning to serve this at holiday parties I am hosting this year, too.
Ingredients:
- 1¼ cup of pecan halves
- ½ cup of packed light brown sugar
- ½ cup of granulated sugar
- ½ cup of heavy cream
- 3 tbsp of butter
- ¼ tsp of coarse sea salt, plus more for toppings
- 1 tsp of vanilla or rum extract

In a deep medium-sized microwave-safe bowl, add the pecan halves, brown sugar, granulated sugar, heavy cream, butter, and sea salt. Place the bowl in the microwave, then let them heat on a high setting for about 6.5 minutes, and make sure to stir them around halfway through the cooking time. After 6.5 minutes, stop the microwave, then give them a good stir until well coated, and allow it to cool on the counter for around 10 to 15 seconds before mixing in the vanilla. Grab a small cookie scoop or scoop up 2 tablespoons of the mixture, then drop them into a large baking sheet lined with wax paper, and greased with nonstick cooking spray or butter. Make sure to space them evenly, then sprinkle sea salt on top if desired, and allow them to cool until set. Serve and enjoy!
