  • 2 tbsp butter (plus extra for greasing)
  • 3 tsp breadcrumbs (for coating the ramekins)
  • 1 large potato (cooked with the peel on)
  • 1 & 1/3 cups mature cheddar (grated)
  • 1/3 cup parmesan cheese (grated)
  • 2 tbsp fresh chives
  • 2 eggs
  • freshly ground black pepper
  • 6 tbsp milk
  • paprika (for garnish)


Step 1

Preheat the oven to 450 degrees F, put a baking sheet to heat it up, butter four ramekin dishes, and dust with breadcrumbs. Next, peel the skin of four large cooked potatoes and mash them. After this, grate 1 & 1/3 cups of mature cheddar and 1/3 cup of parmesan cheese and put them in a bowl with the mashed potatoes. Add 2 tbsp chopped chives, and 2 egg yolks, and season with freshly ground black pepper. Mix well to incorporate the ingredients. In a small saucepan, combine 2 tbsp butter and 6 tbsp milk. Place it over low heat until the butter is melted, then pour it over the potato mixture. Mix well.

Step 2

Next, whisk the egg whites until stiff peaks form, and add this to the potato mixture. After this, fill the ramekins with the potato mixture evenly. Sprinkle some paprika on top. Place the ramekins in the preheated oven and bake for 15 to 17 minutes until puffed and golden.
