Ingredients:

  • cooking oil, for frying
  • leftover mashed potatoes
  • 1 egg
  • ground black pepper, to taste
  • 1/2 yellow onion, finely diced
  • 2 tbsp of all-purpose flour

Directions:

Step 1

In a bowl, add your leftover mashed potatoes and one egg, mix well to combine, then season with ground black pepper to taste. After this, add the diced onion and 2 tbsp of all-purpose flour. Mix well until all ingredients are well combined.

Step 2

Next, heat some cooking oil in a skillet. Once hot enough, scoop a tablespoon of the mashed potato mixture and gently place it in the skillet. Repeat this until you have enough mashed potato patties in the skillet (don’t overcrowd it). After the patties have browned, flip them to the other side, and continue to cook. After frying, place them on a paper towel-lined plate. (You can cook them in batches if you have lots of leftover mashed potatoes.) Serve with some sour cream or your favorite dipping. Enjoy!
