Cut the potato into small pieces. Transfer them to a bowl and add 15 ml water. Microwave for four to five minutes. After this, mash them and transfer them to a bigger bowl. Add 180 ml water gradually and mix well, then add 2 tbsp white sugar, and 1 tsp active dry yeast. Mix and leave for five minutes. After five minutes, add 1 beaten egg, saving 10 ml for later, then add all-purpose flour and 1/2 tsp salt. Mix well until dough forms, then let it rest for 20 minutes covered.
After 20 minutes, add 2 tbsp melted unsalted butter, then knead the dough. Once the butter is fully incorporated, cover it and let it rise until doubles in size. Deflate the bubbles once it doubles in size, then transfer it to a floured surface. Sprinkle some flour on the dough, shape it into a ball, then divide it into 12 equal pieces. Now, flour each piece and shape them into a smaller ball. Repeat this process, then place each ball into a non-stick baking pan.
Cover and let them rise for 45 minutes. After 45 minutes, brush each top with egg wash from earlier, then sprinkle each with sesame seeds (optional). Bake them at 350 degrees F for 15 to 18 minutes.
