Porcupine meatballs are a classic dish that you probably grew up eating, but if not, then you should give it a try now, and you won’t regret it. What’s great about this dish is that it’s already a meal itself because it’s filled with cooked rice which makes every bite hearty.

This is a great dish to serve at parties, cookouts, or any occasion, but you can also make this on an ordinary day. Ingredients for Porcupine Meatballs:

Meatballs

  • 1 pound of ground beef
  • ½ onion, finely chopped
  • ½ cup of cooked rice
  • egg
  • 1 tbsp of fresh or 1 tsp of dried parsley
  • 1 tbsp of Worcestershire sauce
  • 1 tsp of garlic powder
  • ½ tsp of salt
  • ½ tsp of pepper

Sauce

  • 1 cup of tomato sauce
  • 1 can of condensed tomato soup
  • 1 cup of chicken broth
  • 1 tbsp of Italian seasoning

How to Make Porcupine Meatballs:

Step 1

Preheat your oven to 350°F, then in a large mixing bowl mix together the ground beef, chopped onions, cooked rice, egg, parsley, Worcestershire sauce, garlic powder, salt, and pepper just until combined making sure not to overmix.

Step 2

Scoop 1 tablespoon each of the mixture, then shape them into balls, and place them in a 9×13-inch baking dish making sure to space them apart evenly.

Step 3

In a separate bowl, add the tomato sauce, condensed tomato soup, chicken broth, and Italian seasoning, then mix them until well combined, and pour it over the meatballs.

Step 4

Place the baking dish in the preheated oven uncovered, then allow it to bake for about 1 hour, and serve. Enjoy!
