This soup is very delicious and also one of my favorites because it’s so quick to prepare and is perfect for busy days or busy people. Ingredients for Poor Man’s Soup:

  • 1 tbsp of olive oil
  • 2/3 cups of onions, diced
  • 3 cloves of garlic, minced
  • 1 pound of ground beef
  • 3 cups of beef broth
  • (14.5 oz) can of diced tomatoes, basil, oregano, and garlic flavor
  • (29 oz) can of tomato sauce
  • 2 tbsp of brown sugar
  • 1½ tsp of basil
  • 1½ tsp of oregano
  • 1 tsp of thyme
  • bay leaves
  • 2 cups of dry elbow macaroni, cooked al dente and drained
  • Cheddar cheese, shredded, for topping

How to Make Poor Man’s Soup:

Step 1

Place a large pot on a stove over medium heat, then add the olive oil, and heat it before adding the onions. Saute them until softened and translucent, then add the garlic, and keep cooking until fragrant.

Step 2

Add the ground beef, then season it with salt and pepper if desired, and cook it until nice and brown. Once done cooking, drain off the excess grease, then pour in the broth, diced tomatoes, and tomato sauce, and add in the brown sugar, basil, oregano, thyme, and bay leaf.

Step 3

Taste and adjust the seasonings to your preference, then let it simmer for about 20 minutes, while waiting for it to cook, prepare the macaroni until al dente or according to the package instructions.

Step 4

Drain off all the water from the macaroni, then add the pasta to the soup, and turn off the heat. Ladle the soup into bowls, then top them with shredded cheddar cheese, and serve. Enjoy!
