Ingredients:

For the glaze and topping:

  • 1/4 cup of melted unsalted butter
  • 1/2 cup of light brown sugar
  • 7 pineapple rings
  • 7 cherries

For the cake mix:

  • 1 & 3/4 cups of all-purpose flour
  • 1 tsp of baking powder
  • 1/4 tsp of salt
  • 1/2 cup of softened butter
  • 3/4 cup of white granulated sugar
  • 2 eggs
  • 1/2 cup of pineapple juice

Directions:

Step 1

Preheat your oven to 350 degrees F. Next, in a bowl, combine 1/2 cup light brown sugar and 1/4 cup melted butter. Whisk until well combined. Pour this into the bottom of the cake pan and spread it out until it covers the entire bottom. After this, take some pineapple rings and lay them around the pan, then grab up some cherries and place them into the center of the pineapple rings.

Step 2

Next, in another bowl, combine 1/2 cup of melted butter and 3/4 cup of white granulated sugar. Give it a whisk until it’s creamy. After this, add 2 eggs and continue to whisk until everything is well incorporated. Once it’s smooth, add 1/2 cup of pineapple juice. Next, sift in 1 & 3/4 cups of all-purpose flour, 1/2 tsp salt, and 1 tsp baking powder. Whisk it one more time until everything is smooth and silky. Now, go ahead and pour it over the pineapples and spread it out evenly. Place it in the preheated oven and bake for 30 minutes.
