Ingredients:

  • 1 sachet of biscuits or crackers
  • 60 grams or ¼ cup of butter, melted
  • 1 medium pineapple, sliced into small chunks
  • ¼ cup of sugar
  • 1 cup of whipping cream
  • 3 tbsp of condensed milk

Directions:

Step 1

In a food processor or blender, add the crackers or biscuits, then crush them until fine crumbs, and transfer them into a large mixing bowl. You can also crush the crackers or biscuits in a Ziploc bag with a rolling pin. Now, add the melted butter to the cracker crumbs, then mix them together until well combined, and transfer it to a large dish. Spread the crust mixture all over the bottom of the dish pressing it evenly, then cover it with plastic wrap, and put it inside a refrigerator to chill until set. Next, place a pan on a stove over medium heat to medium-high heat, then add the sliced pineapple and sugar, and toss them together until well combined.

Step 2

In a separate mixing bowl, add the whipping cream, then beat it until smooth and thick, add the condensed milk, and continue to beat until well combined and uniform. Add the sauteed pineapple to the cream mixture, then fold them together until combined and incorporated, and set it aside. Get the chilled crust out of the fridge, then remove the plastic, and start to transfer the filling into the crust. Spread the filling nicely and evenly, then decorate it however you want, and put it back in the fridge to let it set until ready to serve. Enjoy!
