This pickled red onion is the perfect side dish for any BBQ! It has this crunchy texture and piquant-sweet flavor that a lot of people love. You can make it in three different ways with these recipes by Smokin’ Joe’s Pit BBQ. I have tried all of them, and I can assure you they all taste amazing. Prepare your jars. Make sure they are sterilized, free from dirt, and dry.
Peel the onions and remove the ends. Slice into half, then cut into thin slices. Place them in a colander with a bowl on the bottom. Pour hot water over the onions and stir it. Set it aside for 1 minute. This process will remove the oniony flavor. If you like the strong flavor, you can just leave it for about 30 seconds, or don’t leave it in the hot water at all and put it directly into the mason jar.
In a bowl, add 1 1/2 cups of hot water, 1 1/2 cups of white vinegar, 2 tablespoons of kosher salt, and 2 tablespoons of sugar. Give it a good mix and set it aside.
Distribute the onions into three different mason jars.
Cut the jalapeno and add it to your first jar. In the second jar, add 1 tablespoon of crushed red pepper. In the last jar, add 1 tablespoon of whole peppercorns.
Fill the jars with the mixture you made earlier and cover them with the lids. Give each one a good shake. Let these sit on your fridge overnight before eating them.
