Ingredients:

Crust:

  • 2 cups digestive biscuits crumbs
  • 1/3 cup unsalted butter, melted

Cheesecake Filling:

  • 16 oz full-fat cream cheese, room temp
  • 1 1/4 cup sour cream, room temp
  • 3/4 cup sugar
  • 3 tbsp all-purpose flour
  • 1 1/2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 3  large eggs

Topping:

  • 1 1/2 cups coconut sugar
  • 1/2 cup golden syrup
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 large eggs, room temp
  • 1 1/3 cup pecan, chopped

Directions:

Step 1

To start, add the digestive biscuits to a food processor and blitz them until you have 2 cups. Transfer them to a mixing bowl and add 1/3 cup of melted butter. Mix well to combine, then layer them on a greased and lined 9″ baking pan. Build the crust at the bottom and freeze for 30 minutes. In the meantime, make the filling. In a large mixing bowl, add 16 oz room temperature cream cheese. Mix using an electric mixer at the lowest speed until creamy. Next, add 3/4 cup sugar, 3 tbsp all-purpose flour, 1 tsp vanilla extract, 1 1/2 tbsp lemon juice, and 1 1/4 cup sour cream. Mix well and set it aside.

Step 2

In another bowl, crack three eggs. Whisk lightly and add it to the cream cheese mixture. Mix well. Once done, add it to the prepared crust and spread evenly and smoothly. Bake it in the oven at 280 degrees F for 50 minutes or until the top slightly sets. While waiting, make the pecan topping. In a large bowl, add 1/2 cup coconut sugar, 1/2 cup golden syrup, 1/4 tsp salt, 1 tsp vanilla extract, and two eggs. Mix well, then stir in the chopped pecans. Once done, layer it to the top of the cheesecake evenly, then continue baking for 30 minutes. After baking, cool it completely, then chill for eight hours.
