Ingredients:

Cake Batter

  • 1 cup flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1/3 + 1 tbsp natural peanut butter
  • ¾ cup sugar
  • 4 eggs, separated
  • 1 tsp vanilla extract
  • 1/3 cup milk

Milk Mixture

  • 7 ounces sweetened condensed milk
  • ¾ cup evaporated milk
  • 1/3 cup whole milk

Frosting

  • 1¼ cups heavy whipping cream
  • 4 tbsp icing sugar
  • 2-3 tbsp peanut butter
  • 1 tsp vanilla extract

Directions:

Step 1

Preheat your oven to 340°F or 170°C, then line a 9×13-inch pan with parchment paper, and then lightly grease it with a nonstick cooking spray or butter before setting it aside. In a large mixing bowl, add half a cup of sugar and egg yolks, then beat them together until pale and fluffy, and beat in the peanut butter until well combined. Pour the milk and add the vanilla extract, then continue to mix them together until well combined. Sift in the flour, baking powder, and salt, then give them a good mix making sure not to overmix, and set it aside.

Step 2

In a separate mixing bowl, beat the egg whites over high speed until foamy, and then gradually pour a quarter cup of sugar while continuously beating until stiff peaks form. Now, fold in 1/3 of the egg white mixture into the batter until well combined before pouring it into the remaining egg white mixture, then gently fold them together until combined, and pour into the prepared pan. Put it inside the preheated oven, then let it bake for about 25 minutes or until a toothpick inserted at the center comes out clean, then unmold the cake, and let cool on a wire rack.

Step 3

In another bowl, add the condensed milk, evaporated milk, and whole milk, and whisk them together until well combined. Put the cooled cake back into the pan, then poke holes all over the cake, and slowly pour the milk mixture letting the cake soak in it. Set the cake aside for at least 1 hour or up to overnight, then make the frosting in a large bowl, simply beat together the peanut butter, sugar, and vanilla extract until smooth, and whip in the heavy cream until stiff peaks form. Unmold the cake, then spread the cream all over the top before putting it inside the refrigerator to set for at least one hour, and then trim the edges before slicing it into squares. Serve and enjoy!
