I grew up eating Grandma’s peanut butter fudge because she would always make it for us whenever we visit! I’ve always loved her version of it and I was so glad when I found this similar recipe by Food Wishes on YouTube. After watching it, I know I have to make it home, and I was not disappointed. I already made it twice this week and I’m still loving it.

Ingredients:

  • 1¼ cups of unsalted butter
  • 1½ cups of creamy peanut butter
  • ½ teaspoon of kosher salt or ¼ teaspoon of fine salt
  • 1½ teaspoons of vanilla extract
  • 1 pound of powdered sugar, sifted or about 3½ to 4 cups, unsifted

Directions:

Step 1

Sift your powdered sugar over a large mixing bowl, then set it aside. Place a medium saucepan on a stove, then add in the unsalted butter and peanut butter, turn on the flame to medium heat setting. Whisk the ingredients together consistently, then once it starts to simmer around the edges and bubbles form, turn off the heat, then add the salt and vanilla extract, and whisk them until well combined. Pour the peanut and butter mixture onto the bowl of sifted powder sugar, then fold and mix until well combined or until the texture becomes smooth (or however you like it).

Step 2

Next, prepare an 8 x 8 baking dish, then line it with a sheet of plastic/ cling wrap, leave some excess on the sides so that you can use it to wrap the fudge mixture. Pour and spread the said fudge mixture onto the baking dish, then spread evenly and mash it down. Wrap and chill it in the refrigerator until it is firm enough to cut. Pull it out and unwrap, then place it on parchment paper, and start cutting it into cubes.
