Step 1
Preheat your 350°F, then line 2 large baking sheets with parchment paper, and set them aside. In the bowl of a stand mixer, add the softened butter, granulated sugar, and brown sugar, then with a paddle attachment beat them until fluffy and blended, add the egg and vanilla extract, and continue mixing until incorporated.
Step 2
In a separate bowl, add the flour, baking soda, salt, baking powder, and oats, then whisk them until uniform, and add it to the mixture in the stand mixer. Mix them until mostly combined and still a little crumbly, then add the dried peaches, and mix until totally combined.
Step 3
Using a small ice cream scoop or tablespoon, measure and portion the cookie dough into balls, then place them on the prepared baking sheet, and make sure to space them about 1 to 1½ inches apart from each other. Place them in the preheated oven to bake for about 8 to 10 minutes or until lightly golden on the bottom and slightly soft on the center.
Step 4
Transfer them to a wire rack, then set them aside, and let them cool completely for about 30 minutes. Once cooled, put the white chocolate chips in a double boiler over medium-low heat, then melt them for about 5 minutes while stirring occasionally.
Step 5
Once melted, dip 1/3 of the cookie into the chocolate coating that section completely, then let the excess drip off, and place it on a baking sheet lined with wax paper. Sprinkle the chopped nuts over the dipped portion of the cookie, then set them aside to cool for about 30 minutes or until hardened, and serve. Enjoy!
