Ingredients for Peach Cobbler Cupcakes:

Peach Cobbler Filling

  • (15.25oz) cans of peach slices
  • 1 tsp of vanilla extract
  • ½ tsp of nutmeg
  • 1 tbsp of cinnamon
  • ¼ cup of light brown sugar
  • ½ cup of granulated sugar
  • 3 tbsp of unsalted butter
  • 2½ tbsp of cornstarch

Cupcake

  • Vanilla cake mix
  • 3 large eggs
  • ½ cup of vegetable oil
  • 1 cup of water
  • ¼ cup of peach cobbler filling juice

Icing

  • 4 sticks of unsalted butter
  • ¼ cup of peach cobbler filling juice, optional
  • 6 cups of powdered sugar
  • 2 tbsp of heavy whipping cream

Topping (optional)

  • Peach slices from peach cobbler filling juice

How to Make Peach Cobbler Cupcakes:

Step 1

Place a saucepan on a stove over medium-high heat, then add the peaches, vanilla extract, nutmeg, cinnamon, brown sugar, granulated sugar, and unsalted butter, and whisk them well until incorporated.

Step 2

Add the cornstarch, then continue mixing until thick consistency, and set the filling aside. Prepare the cake mix according to the package instructions and add some peach cobbler filling juice if desired.

Step 3

Line a cupcake pan with cupcake liners, then fill them halfway up with the batter and top them with some peach cobbler filling.

Step 4

Put a spoonful of batter on top to cover the filling, then place them in a preheated oven at 350°F, and allow them to bake for about 15 minutes or until a toothpick inserted at the center comes out clean.

Step 5

In the bowl of a stand mixer, beat the unsalted butter until creamy, then add the peach cobbler filling while mixing continuously, add the powdered sugar gradually, and continue mixing until doughy.

Step 6

Scrape the sides of the bowl, then gradually pour in the whipping cream, and continue to mix until smooth, silky, and creamy.

Step 7

Transfer the icing to a piping bag, then pipe it on top of each cupcake, and top them with the remaining peach filling slices and some juice with it. Serve and enjoy!
