Easy Patriotic Star Ice Cream Sandwich Recipe

These patriotic star ice cream sandwiches look so beautiful that they are almost difficult to eat but when you do start eating them you won’t be able to stop because of how good they taste! They are the perfect dessert to serve for the 4th of July, parties, or other family functions, or just whenever you crave them.

Ingredients for Patriotic Star Ice Cream Sandwich:

Sugar cookie dough (Click here for the recipe), or use your own recipe
Red and blue food coloring
Vanilla ice cream
Red, white, and blue jimmies or sprinkles or colored sugar

How to Make Patriotic Star Ice Cream Sandwich:

Step 1

Prepare and mix the wet ingredients of the sugar cookies, then divide them into two equal portions in separate bowls, and color each half with red and blue food coloring. Divide the dry ingredients in half and add each half into each bowl, then continue mixing until dough forms, and then put them in separate Ziploc bags.

Step 2

Place them in the refrigerator for about 20 minutes, then place the dough on a lightly floured counter, and roll it until 3/16″ thick. Cut out star shapes with a star cookie cutter, then place them on a baking sheet lined with parchment paper, and bake them in an oven preheated at 350°F for about 8 to 10 minutes.

Step 3

Remove them from the baking sheet and let them cool completely, then place a heavy plate in the freezer for about 1 hour to get cold. Line the cold plate with a square wax paper, then place the star cookie cutter on top, and fill it with ice cream.

Step 4

Carefully unmold the ice cream, then place a red and blue cookie on each side, and gently squeeze them together. Do the same with the remaining cookies, then put them in the freezer, and let them freeze until firm. Sprinkle the edges with jimmies, sprinkles, or colored sugar, then serve, and enjoy!
