I’m such a huge fan of potatoes, they just taste delicious however you cook them! You can boil, fry, or put them in a soup, basically anything you could think of and they would taste amazing. When I need a quick and easy dish to make, I would always turn to this pan-fried potatoes recipe by Cooking With Claudia on YouTube.

Ingredients:

  • 6 medium gold potatoes
  • 4 slices of bacon
  • 1 medium onion
  • Salt and pepper, to taste
  • 3 cloves of garlic
  • ½ tsp of smoked paprika
  • Fresh parsley, chopped

Directions:

Step 1

Fill a pot with water, then sprinkle some salt, and place it on a stove over medium-high heat. Wash and rid the potatoes of any dirt, then put them in the pot of water, and bring it to a boil for about 15 minutes or until a little soft. Next, place a large skillet pan on a stove over medium to medium-high heat, then once the pan is hot enough, put the chopped bacon, and let it cook until it renders fat. Once the bacon is nice and crispy, scoop it out using a slotted spoon, and set it aside. Using the same pan and the rendered fat of the bacon, cook the chopped onion until caramelized, then remove the cooked onion using a slotted spoon, and set aside.

Step 2

If the potatoes are done boiling, drain off all the water, then cut them into small bite-sized pieces. In the same pan where you cooked the onion, add and melt some butter, then add the potatoes, and let them cook for about 2 to 3 minutes on each side until they are nice and golden brown. Put the set-aside bacon and onion back in the pan, then add the minced garlic, and season them with salt and pepper. Toss the potatoes around, then add the paprika, and give them a good mix, make sure to taste and adjust the seasoning if needed. Mix it well, then add some freshly chopped parsley, and lightly mix before turning off the heat. Serve and enjoy!
