Try this super easy and simple but so delicious chicken kebab recipe by TERRI-ANN’S KITCHEN on YouTube. You can cook this on your grill or bake it in the oven, either way, they still taste absolutely amazing.

Ingredients:

  • 500 grams or 1 pound of boneless thighs or chicken breast
  • 1 tbsp of olive oil
  • 1 tsp of salt
  • 1 tsp of mixed herbs (thyme, basil, and marjoram)
  • 2 tbsp of Greek yogurt
  • 1 tsp of garlic powder
  • 1 tsp of soy sauce
  • Juice of half lime
  • 2 tsp of smoked paprika
  • Freshly chopped parsley or coriander

*Always taste and adjust seasonings to your own preference

Directions:

Step 1

Make sure to soak your skewers first in a bowl filled with water before you start preparing the ingredients. This will prevent the sticks from burning later when you cook. Wash the chicken meat well, pat dry, and cut them into small bite-sized pieces. Grab a large mixing bowl, then add in the olive oil, salt, mixed herbs (thyme, basil, and marjoram), Greek yogurt, garlic powder, soy sauce, juice of half lime, and smoked paprika, whisk them well until they are well combined and uniform. Add the slices of chicken, then toss and mix them around until they are well coated with the sauce, using a flat spatula might make this process easier for you. Cover the bowl with plastic cling wrap, then let them marinate for half an hour or up to overnight, the longer the better the flavors can seep into the meat. Preheat your oven to 180°C (356°F).

Step 2

Once the chicken is ready, remove the cover, and give it a good mix once more to ensure that it is evenly coated. Then, start inserting each piece of chicken into the skewers. Line a baking sheet with aluminum foil, then place a rack inside. Now, start placing the chicken skewers on the top and bottom part of the rack alternately to make sure that they have enough space from each other. Brush any leftover marinade sauce into the chicken skewers. Then pop it in the preheated oven and bake them at 200°C (392°F) for about 25-30 minutes or up to 35 minutes for an extra grilled look. About halfway or 15 minutes into the cooking time, take out the chicken skewers from the oven, and start basting them with the juices gathered at the bottom of the pan, turn each skewer to let the other side cook. Put it back in the oven and cook for an additional 10-15 minutes. Garnish with freshly chopped parsley or coriander, then serve!
