These brookies have three layers. For the first layer, you need to make the cookie dough. Spread it evenly on your pan, then add the Oreo cookies for the second layer. For the last layer, make the brownie batter and pour over the cookies. You can top it with chopped Oreo and chocolate chips if you want. They are super easy to make and will surely be a crowd favorite.

Oreo Brookies Ingredients
For the cookie base:
- 3/4 cup and 2 tablespoons of butter (softened)
- 1 cup and 1/4 cup of packed light brown sugar
- 1 large egg
- 1 teaspoon of vanilla
- 1 1/2 cup and 3 tablespoons of flour
- 1 teaspoon of baking powder
- 16 Oreos
For the fudgy brownie:
- 3/4 cup of unsalted butter (melted)
- 1 1/4 cup of caster sugar
- 2 large eggs
- 4.4 oz of dark chocolate (melted and cooled slightly)
- 1/2 cup and 2 tablespoons of plain flour
- 1/4 cup of cocoa powder
- 1 teaspoon of salt
- 3.5 oz of white chocolate chips
Toppings:
- 10 Oreos (roughly chopped)
- 1.8 oz of white chocolate chips
- caramel sauce (optional)
How to Make Oreo Brownie Cookies
Step 1:
Make the cookie base. In a large bowl, add the softened butter and light brown sugar. Cream them together. Mix in the egg and vanilla.
Step 2:
Add the flour and baking powder. Mix to form a dough. Fold in the chocolate chips. Place the cookie dough into a 8″ x 8″ baking tin. Spread and press down firmly. Place 16 cookies on top in one layer. Refrigerate for 20 minutes.
Step 3:
Make the brownie layer. Add the melted butter in a bowl, then add the caster sugar. Whisk until combined. Add the eggs and whisk until soft peaks.
Step 4:
Add melted dark chocolate and mix until well combined.
Step 5:
Sift in the cocoa powder, flour, and salt directly to the mixture. Fold in until just combined. Mix in the white chocolate chips.
Step 6:
Spoon the brownie batter on top of the Oreo layer. Spread evenly. Top with broken Oreos and white chocolate chips.
Step 7:
Bake at 338F (fan) for 35 to 45 minutes. Refrigerate overnight.
Step 8:
Slice, then drizzle caramel sauce on top.
