Ingredients:

  • 2 lb of russet or Yukon gold potatoes
  • 1/2 large white onion (chopped)
  • 1 red bell pepper (chopped)
  • bacon strips (you can also use ham, sausage, or corned beef)
  • sage leaves (minced)
  • 4 large eggs
  • fresh chives (minced)
  • kosher salt
  • freshly ground black pepper

Instructions:

Step 1:

Peel, chop, and boil the potatoes for 5 minutes. You can also use leftover baked potatoes.

Step 2:

Place the bacon strips in a skillet and cook until crispy. Once done cooking, remove from the skillet and place on a plate with a paper towel.

Step 3:

In the same skillet with the bacon grease, toss the onions and red pepper. Saute over medium heat for about 3 to 5 minutes until softened.

Step 4:

Add the peeled, par-cooked potatoes. Toss around to evenly coat them and press everything in an even layer. Let it sit without mixing over medium heat for about 2 minutes. After that, use a firm, sharp spatula to dig under the potatoes and flip them. Press the potatoes down again and let them sit for another 2 minutes. Repeat the process four times until all are cooked, crisp, and browned.

Step 5:

Chop the bacon, then sprinkle on the potatoes, followed by the minced sage. Mix everything together. Then dig four little divots, then crack an egg in each divot. Cover with the lid and cook over medium-low heat for 4 to 5 minutes until the whites are set. Then sprinkle some freshly minced chives
