We can all agree that any dish that involves potatoes is guaranteed to taste incredibly good almost all of the time. They just never fail to be yummy whether you fry or bake them, or in this case when you serve them as a soup. Step 1
Place a Dutch oven or pot on a stove over medium-high heat, then put the bacon in, and let them cook until nice and crispy. Clean the potatoes off any dirt and make sure they are pat dried, then poke holes on them on all sides using a fork, and place them in the microwave to heat up for about 12 to 15 minutes or until softened.
Step 2
Remove the cooked bacon from the pot and transfer it to a plate lined with paper towels, then in the same pot, add the chopped onions, and saute them until brown and caramelized. Add the butter and let it melt, then remove the potatoes from the microwave, and peel off the skin before adding the potatoes to the pot.

Step 3
Reserve some of the bacon and chop them into chunks or whatever size you want, then mash the potatoes that are in the pot, and give them a good mix. Pour in the milk followed by the sour cream, then stir them all together until combined before adding in the potato chunks, and then continue to mix.
Step 4
Add the shredded cheese, then crumble the crispy bacon, and add them in as well. Give them a good mix, then turn off the heat, season them with salt and pepper to taste, and mix them well. Serve and enjoy!
