Ingredients:

Pork

  • 3 pounds of pork shoulder, skinless, and boneless, cut into 6 equal pieces
  • 1 tsp cooking or kosher salt
  • ½ tsp black pepper
  • 2 tsp cumin powder

Sauce

  • 7 ounces of canned chipotle in adobo, remove the chilis and include the sauce
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 4 garlic cloves, finely minced
  • ¼ cup tomato paste
  • 1 cup freshly squeezed orange juice
  • 2 cups chicken stock or broth, low sodium
  • 2 bay leaves, fresh or dried
  • 1 tsp cooking or kosher salt
  • 3 (16 ounces) cans of beans, any kind preferred

Herb and Spice Mix

  • 1 tbsp dried oregano
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp allspice powder

Directions:

Step 1

In a blender, add the chipotle in adobo, then blend or emulsify it until smooth, and set it aside. Season and rub the pork well with salt, pepper, and cumin, then place a large oven-proof pot on a stove over high heat, add the oil, and allow it to heat up before placing the pork. Allow the pork to cook for about 1 minute on each side or until browned evenly, then remove the pork, and set it aside.

Step 2

Let the pot cool down slightly, then put it back on the stove over medium heat, and add 1 more tablespoon of oil if needed. Now, add the onion, garlic, oregano, cumin powder, coriander powder, and allspice powder, then give them a good toss, and saute them for about 3 minutes. Next, add the tomato paste, then give them a good stir, and cook for 2 minutes before adding the chipotle puree.

Step 3

Stir them together to combine, then continue to cook for 2 more minutes, and then add the orange juice, chicken stick, bay leaves, and salt. Give them a good mix until well combined, then place the seasoned pork inside, and make sure to submerge it nicely.

Step 4

Cover the pot with the lid, then put it in a preheated oven at 180°C or 350°F, and allow it to cook for about 2 hours or until the pork is tender. After slow cooking for 2 hours, remove the pot from the oven, then add the beans to the mixture, and put it back in the oven without the lid to cook for 30 more minutes or until the surface is nicely caramelized. Serve and enjoy!
