This comforting one-pot meal recipe by The Hillbilly Kitchen – Down Home Country Cooking on YouTube is definitely a winner! Chili is a staple dish in our household and we have tried many versions of it but we always go back to a simple and easier approach such as this one. This recipe is versatile and you can modify it to your preference by adding any ingredient that you want to take it to the next level!

Materials:

  • 1½ pounds of ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 jalapeño peppers, chopped
  • 3 cans of kidney, pinto, and black beans
  • 1 or 2 cans of tomato of your choice
  • Cayenne or chili powder, to taste
  • Salt and pepper, to taste
  • 1-2 tsp of sugar
  • 1 tbsp of vinegar

Directions:

Step 1

Place a large pot on a stove over medium-high heat, then add the ground beef, break it apart, and let them cook until nice and brown. Drain off most of the grease, then lower the heat setting, and add the bell pepper, jalapeño peppers, and onions.

Step 2

Give them a good toss to combine, then season them with salt and pepper, and let them cook until nice and translucent. Add the kidney beans, pinto beans, and black beans into the pot making sure to add the juices as well, then add the canned tomato, and mix them all together until well combined.

Step 3

Now, add the sugar and vinegar followed by the cayenne or chili powder, then give them a good mix until well combined and incorporated, and bring it to a simmer for about 30 to 45 minutes or until the sauce has thinned out. Serve and enjoy!
