Ingredients:

Chicken Stew

  • 8 skinless and boneless chicken thigh fillets, quartered
  • carrots, peeled and chopped into chunks
  • 3 medium-sized potatoes, peeled and chopped into small chunks
  • 2 sticks of celery, sliced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 5 cups chicken stock
  • 3 tbsp unsalted butter
  • 1 large onion, peeled and finely chopped
  • ½ cup all-purpose flour

Dumplings

  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 1 cup grated cheddar cheese, packed
  • ½ tsp dried parsley
  • 2 tbsp unsalted butter, melted
  • ¾ cup milk

Garnish

  • Freshly chopped parsley

Directions:

Step 1

In a large saucepan, add the chicken, potatoes, celery, salt, pepper, thyme, and stock, then bring them to a boil, and allow them to simmer for 15 minutes before turning off the heat. At this point, preheat your oven to 375°F, then place a Dutch oven on a stove over medium heat, add the butter, and let it melt. Add the onions, then saute them for about 5 to 6 minutes or until softened, then add the flour, and give them a good whisk until combined.

Step 2

Let the roux cook for 1 minute, then add a ladle of stock, and continue to whisk until well combined. Keep adding a ladle of stock and whisking until fully combined, then bring it to a boil, and let it gently simmer while stirring occasionally until thickened. Pour in the remaining stock along with the chicken and vegetables, then simmer for a few more minutes, and while waiting prepare the dumplings.

Step 3

In a large mixing bowl, add the flour, baking powder, cheese, and parsley, then mix everything until combined, add the melted butter and milk, then stir them in until dough forms. Turn off the heat on the pan with the chicken, then drop large scoops of the dumpling mixture, and place the Dutch oven in the preheated oven. Allow it to cook for about 15 to 20 minutes or until lightly browned, then let it rest on the counter for at least 5 minutes, and garnish it with fresh parsley. Serve and enjoy!
