Ingredients:

  • 1 medium brown or yellow onion, finely chopped
  • 2 cloves of minced garlic
  • Vegetable oil
  • 2 pounds of ground beef
  • ½ cup of powdered taco seasoning
  • 1 cup of taco sauce or tomato salsa
  • 2 cups of water
  • 4 cups of beef stock
  • 5 cups of macaroni pasta
  • 3 cups of cheddar cheese, grated
  • Salt, to taste
  • Pepper, to taste

Directions:

Step 1

Place a large pot on a stove over medium-high heat, then heat up some oil, and add the chopped onions and minced garlic. Give them a good stir and let them cook for a few minutes until the onions have softened lightly. Add the ground beef, then break it apart, and cook for about 5 minutes until nice and browned. Drain off all the excess grease, then add the taco seasoning, taco sauce or tomato salsa, water, and beef stock, and give them a good stir until well combined. Add the macaroni, then give it a gentle stir until distributed and submerged, and bring it to a boil.

Step 2

Once boiling, turn down the heat to low, then let it simmer uncovered for about 15 minutes making sure to give it a stir 2 to 3 times to prevent the pasta from sticking to the bottom of the pot. Bring the heat up to medium, then gently stir the mixture around for 15 minutes until most of the liquid has been absorbed, and then turn off the heat. Season it with salt and pepper to taste, then add the cheese, and gently stir it through until the cheese has melted into the sauce. Serve and enjoy!
