When it comes to soup, there are a lot of great recipes that you can find readily available for you to learn online, but my personal favorite would be this version by The Hillbilly Kitchen – Down Home Country Cooking on YouTube because of its simplicity and deliciousness. This broccoli soup only requires a few simple ingredients to make and is budget-friendly, too. Step 1
Place a pot on a stove over medium heat, then add the butter, and stir it around until melted. Add the onions, celery, and some chopped broccoli stem as well (optional), then give them a good stir, and then add the carrots. Season them with salt and pepper, then stir them all together to combine, place the lid of the pot, and allow them to cook for about 5 to 6 minutes or until tender. Break the broccoli into smaller pieces, then after about 5 minutes, pour water into the pot, stir them until incorporated, put the lid back on, and bring it to a simmer for 5 more minutes or so.

Step 2
Add the cornstarch to the milk, then give them a good stir to dissolve and incorporate, and set it aside. After letting the mixture simmer, add the broccoli, then stir them together to combine, cover the pot with the lid again, and let it simmer for about 10 more minutes. Now, add the cornstarch milk mixture into the pot, then stir them together until combined and thickened, add the cheese, and stir them again until melted. Scoop the soup into a serving bowl, then garnish it with the remaining cheese, and serve. Enjoy!
