This easy one pot broccoli cheddar soup by Tasty is my go-to meal every fall season. It has this rich and creamy taste that I always crave. It’s super easy and quick to make. You don’t need to spend a lot of time in the kitchen to make this dish! You can serve it with chicken, turkey, or ham. If you don’t like meat, you can try salads, pasta or bread.

Start by trimming stems off of broccoli heads and cut into small florets. Make sure to remove the hard parts.
Get a large pot and add 1/4 cup of butter. Once melted, add the diced onion. Saute until translucent.
Add 1/4 cup of flour and stir over medium heat until it becomes lightly brown.
Pour 2 cups of half-and-half while stirring. Mix until the soup reaches a simmer.
Add 2 cups of veggie or chicken stock and let it simmer on low heat for about 5 to 10 minutes.
Add 2 cups of chopped broccoli, 1/2 cup of shredded carrots, 2 teaspoons of salt, 1 teaspoon of pepper, and 1/4 teaspoon of nutmeg. Mix everything until well combined. Cover it with the lid and let it simmer on low heat for about 10 to 15 minutes.
Add 2 cups of cheddar cheese to your soup and stir until melted.
Ladle into a bowl or bread bowl, then garnish with bacon bits or more cheese if you want. Enjoy!
