You’ll be surprised how simple leftover ingredients can turn into something delicious and truly mouth-watering. I served this to my family last night and they loved it, they even asked me to make it often for dinner.

Ingredients:

  • 2½ cups of mushrooms
  • 1 onion, chopped
  • 1 small yellow pepper
  • 1 small red pepper
  • 1 small jalapeno, if desired
  • 1 clove of garlic
  • Salt and black pepper, to taste
  • Parsley, chopped

Sauce

  • 1 tsp of brown sugar
  • 2 tbsp of soy sauce
  • 1 tbsp of rice vinegar
  • 1 tbsp of ketchup

Directions:

Step 1

Slice the mushrooms, then chop the onions, bell peppers, and jalapeno if using. Place a pan on a stove over medium-high heat, then heat up some oil, and add the mushrooms. Give them a good toss and saute until nice and brown, then add the onions, bell peppers, and jalapeno, then stir them all together until combined, and let cook for a few minutes while mixing the sauce mixture.

Step 2

In a small mixing bowl, add the cane sugar, soy sauce, rice vinegar, and ketchup, then stir them together until dissolved and uniform, and pour it into the mushrooms. Season them with salt and pepper to taste, then toss them all together until well combined, and add in the minced garlic along with some chopped parsley. Give them a good final mix, then turn off the heat, and transfer them to a serving plate. Serve and enjoy!
