I tried this delicious recipe by Jasmine’s Kitchen today and it is so good and super easy to make! I served it for dinner and my family can’t believe that this isn’t bought from the restaurant because it is so yummy. You can serve this for ordinary family mealtime or you can make this for the next cookout, party, or gathering that you’re hosting, surely your guests won’t be able to stop themselves to go for another serving after the other.

Ingredients:

  • 3 skinless salmon filets
  • Salt, to taste
  • Black pepper, to taste
  • Smoked paprika, to taste
  • 4 tbsp of unsalted butter

Sauce

  • 2 tbsp of minced garlic
  • ¾ cup of diced yellow onions
  • 1/3 cup of white wine or broth
  • ½ cup of drained sun-dried tomatoes
  • 1½ cups of heavy cream
  • ¼ cup of shaved or shredded parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • 3 cups of baby spinach

For serving

  • Crushed red pepper
  • Freshly chopped parsley

Directions:

Step 1

Place a skillet pan on a stove over medium heat or 325°F, then while preheating the pan, season both sides of the salmon with salt, pepper, and paprika. Melt the butter on the pan, then place the seasoned salmon, and cook them for about 4 minutes before flipping them over. Cover the pan, then let them cook for 4 more minutes, remove the cooked salmon, and set them aside. In the same pan, add the minced garlic and diced yellow onions, then toss them together, and saute for a few minutes or until nice and translucent. Pour the white wine, then stir well, and let it cook for about 2 minutes before adding the sun-dried tomatoes.

Step 2

Reduce the heat up to 225°F or low heat, then pour the heavy cream, and add the shaved parmesan letting them cook until melted and well combined. Season them with salt and pepper, then reduce the heat to 200°F before stirring the sauce together, and then add the baby spinach. Stir and cook them until the spinach becomes wilted, then put the cooked salmon back into the pan, and let them cook for a few more minutes until the sauce has thickened. Sprinkle crushed red pepper and freshly chopped parsley all over the salmon, then serve, and enjoy!
